  • 1.00 large Acorn Squash
  • 2.00 tbsp Olive Oil
  • 1.00 tbsp Lime Juice
  • 1 tsp Salt
  • 0.25 tsp Cayenne Pepper
  • 0.25 tsp Paprika

Instructions

  1. 1.Preheat oven to 400°F (200°C).
  2. 2.Cut acorn squash in half, remove seeds, and cut into 1-inch cubes.
  3. 3.In a large bowl, toss squash with olive oil, lime juice, salt, and cayenne.
  4. 4.Spread on a baking sheet in a single layer.
  5. 5.Roast for 25-30 minutes, flipping halfway through, until tender and lightly browned.
