- 1.00 large Acorn Squash
- 2.00 tbsp Olive Oil
- 1.00 tbsp Lime Juice
- 1 tsp Salt
- 0.25 tsp Cayenne Pepper
- 0.25 tsp Paprika
Instructions
- 1.Preheat oven to 400°F (200°C).
- 2.Cut acorn squash in half, remove seeds, and cut into 1-inch cubes.
- 3.In a large bowl, toss squash with olive oil, lime juice, salt, and cayenne.
- 4.Spread on a baking sheet in a single layer.
- 5.Roast for 25-30 minutes, flipping halfway through, until tender and lightly browned.
